Best food for a 7 month old baby and how often?

I’ve been feeding my baby only once a day, and sometimes none at all. I am a working mom and sometimes I’m too rushed to take time to prepare food. I’ve been feeding him home-prepared meals like mashed potatoes, squash, and Gerber sweet potato and banana. I also make apple juice and pear.
Please help me extend my repertoire of solid food for my baby by sharing recipes of food and drink and also the frequency. Thank you, I greatly appreciate all the help.
